Pancakes makes for a great start for a weekend morning. Thomas likes them thin so here is my recipe for thin, light and fluffy pancakes. You can serve it homemade jam or maple syrup.

3 eggs
115 g flour
140 ml milk
pinch of salt
1 tsp baking powder

1. Mix all the ingredients together in a large bowl. Make sure there are no lumps.
2. Cook on hot skillet- this recipe makes 8 medium sized pancakes.

Thanks for giving out this recipe. I was always uncertain how many eggs / flour I should use when making pancakes

I found this combination after quite a number of attempts! There is a trick to making the pancakes even lighter and fluffier- just seperate the eggs and whisk the egg whites until thick and fluffy before folding into the mixture. I only do that on special occasions.

Thanks, Paula! Pancakes turned out great... I put spinat & oksekĂžd... with bit of oste in them. mmm!
